Today is day 5 of eating fully raw! I’m proud of my progress and I have really been enjoying this challenge. I love the simplicity of eating raw (hardly any dishes to wash!) and how I have been fully enjoying the tastes of fruits and veggies, as they aren’t masked with seasoning and other ingredients we usually cook with.
So this is a little example of what I have been eating this week as a fully raw vegan!
For me, breakfast hasn’t changed up that much because I always start with a large piece of fruit or a smoothie. However, after drinking a liter of water, Marty and I have been drinking maca powder as a coffee substitute. I love it! I’m not incorporating coffee into my diet anymore, as it’s not good for my skin and I don’t like the crash coffee usually leaves me with.
Maca gives me energy, but in a very smooth and satisfying way. No spikes or dips in my mood or body. And since maca is made from a root, there are a ton of health benefits! I drink my maca from the brand Macaccino in their Dark Reserve flavor, with a little almond milk and a sprinkle of cinnamon.
The smoothies I have are generally very simple. I did, however, buy my first papaya the other day. I didn’t like the taste on its own, but I threw it into a smoothie with mangoes, water and vanilla bean powder and it was delicious!
I also love to have a mango and a banana or half a watermelon if I’m not feeling a smoothie.
I am definitely a snacker throughout the day. Again, my snacks haven’t changed too much from any of my last posts. (Almonds, walnuts, dates, oranges, berries, bananas, mangoes etc). I did just learn how to make raw brownies that I have been munching on all week. This recipe comes from Kate Fruit Flowers, who has an amazing raw vegan Youtube channel as well as an ebook.
For these brownies, you simply combine:
- 2 cups of dates
- 1 cup of cacao powder
- 1 cup of walnuts
- 1 teaspoon of vanilla
Spread the dough out onto a pan and refrigerate for 30 minutes! They taste like they are bad for you, but you could eat the whole pan in one sitting if you wanted to 🙂
I don’t typically have a sit-down lunch, as I am usually at work or out for the day. But on the few occasions that I am at home and I’m not eating fruit, I eat something pretty simple. A bowl of avocado and tomato with a little salt and pepper has quickly become my go-to lunch. Here, I topped it with a little raw sauerkraut which was even more amazing.
If you have read any of my other posts, you know I’m a fan of vegetable noodles for dinner. (check out my noodle post!). For dinner today, I made a delicious mango avocado sauce to pour over my zucchini. I was inspired by someone else to make this recipe, although I don’t remember where I read it, so I’m not taking full credit here. But this recipe is super easy!
All I did was blend the following ingredients in the food processor:
- one, large fresh mango,
- 2 ripe avocados,
- half an onion
- about a handful of cilantro
Top with some more cilantro and a sprinkle of chili flakes for heat! This dish is creamy, slightly sweet and refreshing!
Eating raw has felt amazing these past 5 days. I have learned how great it feels to eat simply. I see these beautiful, elaborate vegan meals on Instagram all the time and I think that what I eat should look like that. However, it is more realistic for my life to eat clean, with few ingredients.
